Cheesey Barbecued Potatoes

Potatoes will never be the same again. Everyone's favourite accompaniment just got better.


A delicious accompaniment to your grilled meat dishes it's so easy to cook at the same time.

Total: 55 minutes

Ingredients


750g boiling potatoes, peeled and thinly sliced 1 onion, cut into fine rings

50g butter

3/4 cup (100g) grated cheddar or Swiss cheese

2 tablespoons finely chopped fresh parsley

2 tablespoons dry white wine

⅓ cup (80ml) chicken stock

salt and freshly ground black pepper


Method


Heat the barbecue hotplate to medium and place a large sheet of foil on the grill. Fold over the edges creating a rim as pictured.

Spread the potatoes and onions onto the sheet of foil, Top with dots of butter, sprinkle with the cheese and parsley and drizzle with the wine and stock. Season with salt and black pepper and seal tightly with a matching sheet of foil.

Cook the parcel on the barbecue for 40 minutes, or until the potatoes are tender. Serve hot.
