Barbecued Fruit Parcels Recipe

Finish off your meal with a barbecued twist on your favourite fruit.


This easy dessert is perfect for a barbecue. Just place the parcels on the warming. Almost any type of fruit can be cooked this way, so experiment with combinations and spices.

Ingredients


1 banana, skin left on

1 yellow peach or nectarine

¼ cup (60 ml) orange juice

1 tablespoon rum

2 teaspoons brown sugar

1 tablespoon butter

2 cinnamon sticks

ice cream, to serve


Method


Split the whole banana lengthways through the skin, without removing the flesh. Cut the peach or nectarine in half and remove the stone. Arrange skin side down on a piece of foil.

Mix the orange juice, rum and brown sugar together, and sprinkle the mixture evenly between the banana and peach or nectarine. Dot the flesh with butter, place a cinnamon stick on top, then sandwich the fruit back together and wrap them in the foil.

Preheat the barbecue to medium heat. Place the fruit foil parcels on the warming rack and slowly cook with the hood closed for about 10-15 minutes. The fruit will softened and started to caramelize. Once cooked, Divide the fruit between two serving plates and give each one a scoop of ice cream. (Multiply up the recipe, depending on the number of guests.)
